I think the real Uzi stock, is a bit of a pig as well…
It does get easier with a bit of practise…but still a bit of a pain…

You’ll need a donor Le Hui MP9 and a hacksaw. 
I just happened to have three, two pimped and one sacrificial for spare parts
You have to cut the stock mount off the back of the MP9 receiver moulding and securely screw it onto the backplate of the UZI. Then slot the side of the Uzi receiver for the latchback hook.
It’s a bit of work, but if you’re up for it, I can highly recommend.
Worth keeping in mind it also renders the MP9 pretty much unusable.
eck … i only got 1 x MP9. Dont want to chop it though.
